Yet another successful experiment! We took a batch of our year old amber rum blended it with a generous measure of local maple syrup and put the entire concoction into a newly emptied American Oak bourbon barrel from Kentucky. After several months, we found the combination to be completely delightful and thus, an entirely new rum was born - Ironworks Maple Rum. Slightly lower in alcohol content at 30% ABV and totally yummy. Add it to coffee or hot apple cider. Would make the best Hot Rum Toddy or drizzled over ice cream. You might be tempted to put it on your pancakes - just make sure you don't have to go to work that day!
