SOUNDS OF THE FOREST

Infusing Teas into alcohol is becoming a trend which brings a new level of craftmanship and consideration to your cocktail repertoire. A tea can contribute rich aromas and layered taste notes without added heaviness, and gives unlimited opportunity to combine your favourite sipping beverages! This warm drink is best enjoyed as a mulled, large batch cocktail to cater to a holiday party of any size.

 

INFUSION
• 1 tin Just Us! Sounds of the Forest Loose leaf Tea
• 750 ml Ironworks Vodka

Steep 2 tsp of loose tea per 1 oz of vodka. Let stand for up to 24 hours, tasting occasionally to avoid over-infusion or bitterness.

CINNAMON ORANGE SIMPLE SYRUP
• 1 cup sugar
• 1 cup water
• 1 Naval Orange
• 3 cinnamon sticks

Add sugar and water to a small saucepan and stir on medium heat until the sugar dissolves. Add cinnamon sticks and orange skin only, reduce heat to low and cook for 5 minutes. Remove from heat and let sit for 10 minutes to continue infusing. Strain through a fine mesh strainer to remove solids. Store in refrigerator.

 

 

COCKTAIL
• 1.5 L Local Apple Cider
• “Sounds of the Forest” Vodka Infusion
• Cinnamon Orange Simple Syrup
• bitters

In a medium-sized pot, add 1 oz apple cider, 1/2 oz Starlight Vodka infusion and 1/4 oz cinnamon orange simple syrup per cocktail. Bring to heat, serve in a rocks glass or a mug with a dash of bitters and garnish with a sprig of rosemary.
