SEA SMOKE SOUR

Our good friend, Steven "Crusher" Cross, beverage wizard at 2 Doors Down in Halifax created this gem of a cocktail in honour of World Cocktail Day which takes place every year on May 13th. The Lapsang Souchong Tea adds a superb depth and complexity to the light apple and floral notes of Ironworks Vodka.

INGREDIENTS

  • 1 egg white
  • 1 oz fresh lemon juice
  • 3/4 oz simple syrup (equal parts water and white sugar)
  • 2 oz Ironworks Vodka infused with Lapsang Souchong tea (directions below)

TEA INFUSED VODKA DIRECTIONS

This tea is superb when it comes to adding depth and complexity to Ironworks light apple and floral notes. It is very smoky and earthy reminiscent of pipe tobacco.

  • 1 Small bottle Ironworks Vodka (375mls)
  • 1 Large sterile Jar with a lid ( 500 mls)
  • 1 Tea infuser (optional but makes the process easier)
  • Loose Lapsang Souchong Tea 1 tablespoon

DIRECTIONS

Pour the vodka in your clean jar. Add tea to infuser or loose into jar. Cover and let sit for minimum 6 hours. The longer it sits the more flavour the vodka will take on; however more than 12 hours will make this essentially a smoked spirit and the nuances of vodka will disappear. . You should slowly swirl the liquid every 2 hours to help the infusion along. When the spirit has reached the desired level of smokiness, remove the infuser and  fine strain the tea from the liquid and return to the bottle. Always use a funnel here we don’t want to lose any of the spirit here. You now have a smoked vodka to make cool twists on martini’s sours or even Caesars!

PREPARATION

Add all ingredients to a shaker tin. Shake hard and strain into a Martini or Coupe glass.

Garnish with a  few drops of Ironworks Haskap liqueur if desired.
