This cocktail was inspired when our sales manager, Rebekkah, was musing about wanting a pink cocktail! We started with a rhubarb-cinnamon simple syrup and went from there.
- 1 1/2 oz Ironworks Rhubarb Esprit
- 1 1/2 oz Ironworks Vodka
- 2 oz Rhubarb-cinnamon simple syrup*
- Soda Water
- Cinnamon stick
Fill a glass with ice, add simple syrup, Ironworks Vodka, Rhubarb Esprit and gently stir. Top with Soda Water and garnish with a cinnamon stick.
* Rhubarb-Simple Syrup:
In a medium sized saucepan:
- 4 cups chopped rhubarb
- 1 cup white sugar
- 1 cup water
- 1 cinnamon stick
- Combine the rhubarb, sugar, and water in a heavy-bottomed saucepan and bring to a boil. Lower the heat to a simmer and cook gently, stirring occasionally, until the fruit is soft (about 15 minutes). Add cinnamon stick and cook for a further 5 minutes.
- Use a mesh strainer over a large bowl. Slowly pour the rhubarb mixture through the strainer until most of the liquid is in the bowl. Press the solids a little with the back of a spoon to extract more syrup.
Chill before use.
