Since we first started distilling in 2009, the pear eau-de-vie has been a favourite of ours. So much so that we have been reluctant to consider mixing it with anything….until now. Anne Marie Bungay-Larose, bartender and creative mixologist now tending bar at The Carlton, one of Atlantic Canada’s premier live music venues, came up with a combination that really does our fruit spirit justice – and includes the sparkling delight of Blomidon Wineries sparkling “Crement”. Truly a celebration of the bountiful harvests of the Annapolis Valley
- 1/2 oz fresh lemon juice
- 3/4 oz honey syrup*
- 1.5 oz Ironworks Pear Eau de Vie
Fill a cocktail shaker tin with ice and shake very well.
Strain into chosen glass and top with 2 oz of Nova Scotian fine sparkling wine.
Garnish with slices of fresh pear.
*dissolve 2 parts honey into 1 part hot water & allow to cool.
